* Ingredients:
1 small potato, diced
1/2 small carrot, diced
1 1/3 cups water
2 tablespoons clean, raw cashews
1 1/2 tablespoons fresh lemon juice
3/4 teaspoon salt
1/8 teaspoon celery salt
* Directions:
Simmer potato and carrot in water. When cooked, process with
remaining ingredients (including cooking water) in a blender, until
very smooth. Serve over vegetables or potatoes. Yields 2 cups or 8
servings.
Variation: For Hollandaise Sauce, increase lemon juice to 2 tablespoons.
