Greek Salad

* Ingredients:

Dressing:

2 T. lemon juice

1 clove garlic, minced

1/2 t. salt

1/4 t. dried oregano

1/4 cup olive oil

1/2 cup sliced black olives



Salad:

4 cups torn red leaf lettuce

4 cups torn green leaf lettuce

1/2 cup thinly sliced red onion

1 medium tomato, diced

1 small green pepper, seeded and chopped

1/3 cup crumbled feta cheese

* Directions:

In a small bowl combine lemon juice, garlic, salt, and oregano. Use
a whisk or fork to beat in oil gradually. When blended, add olives.
Allow to marinate for 30 minutes. In a salad bowl, combine lettuce,
red onion, tomato, and green pepper. Toss gently with olives and
dressing. Sprinkle with cheese.
