Calico Coleslaw

Coleslaw should be made at least an hour before serving so that the vinegar in
the dressing can tenderize the cabbage a bit.

* Ingredients:

4 cups coarsely shredded green cabbage

3 cups coarsely shredded red cabbage

2 carrots, coarsely grated

1 small onion, finely chopped

1/3 cup reduced-fat mayonnaise

1/3 cup nonfat plain yogurt

2 tablespoons cider vinegar

2 teaspoons sugar

3/4 teaspoon salt

1/2 teaspoon celery seeds

1/2 teaspoon black pepper

* Directions:

Place the cabbages, carrots, and onion in a large mixing bowl. In a
small bowl, whisk together the mayonnaise, yogurt, vinegar, sugar,
salt, celery seeds, and pepper until the sugar dissolves. Pour the
dressing over the vegetables and toss to mix thoroughly.
Refrigerate the coleslaw for at least 1 hour (up to 8 hours) before
serving.
