* Ingredients:
1 cup bulgur wheat
1 cup boiling water
2 large tomatoes, diced
1 bunch Italian parsley, chopped
½ bunch green onions, chopped
1 small sweet onion, chopped
1 cucumber, diced
½ teaspoon salt, or to taste
½ cup fresh lemon juice
¼ cup fresh mint leaves, chopped (optional)
½ cup sliced black olives (optional)
* Directions:
Rinse bulgur wheat well, using a strainer. Place in a large bowl
and cover with boiling water. Let stand while chopping vegetables,
then drain well. Mix with chopped tomatoes and allow bulgur to
absorb tomato juices. Layer vegetables in order given and sprinkle
salt over top. Allow to sit while squeezing lemons. Add lemon juice
and remaining ingredients and toss well. Serve on a platter or on
individual plates lined with Romaine lettuce leaves, if desired.
