Crusty Oven "Fries"

Your whole family will love these baked "fries," which are much lower in fat
than the deep-fried originals.

* Ingredients:

Vegetable or olive oil spray

1½ pounds unpeeled russet or all-purpose potatoes, scrubbed

1 tablespoon vegetable oil

½ teaspoon salt, plus additional to taste

¼ teaspoon paprika

¼ teaspoon black pepper

* Directions:

Preheat the oven to 425ºF and position a rack in the upper level of
the oven. Lightly coat a rimmed baking sheet with oil spray.

Cut each potato lengthwise into ½-inch-thick slices; stack the
slices and cut into ½-inch-wide strips. Place the potatoes in a
colander, run them under cold water to rinse off some of the
starch, and pat them dry on several layers of paper towels.
Transfer the potatoes to the prepared baking sheet. In a small
bowl, combine the oil, salt, paprika, and pepper and drizzle over
the potatoes. Using your hands, toss the potatoes with the flavored
oil until they are evenly coated, and spread them out on the baking
sheet in a single layer.

Bake for 20 minutes. Use a spatula to turn and redistribute the
potatoes; return to the oven and continue to bake until the
potatoes are golden brown, 15 to 20 minutes longer. Serve
immediately, seasoned with additional salt if necessary.
