* Ingredients:
1½ lbs. small white onions, peeled
2 quarts boiling water
2 t. salt
3 T. margarine
3 T. flour
1½ cups milk
¼ t. paprika (optional)
* Directions:
Cook the onions in the boiling salted water until tender in center
(about 20 minutes). In the upper half of a double boiler, melt the
margarine. Blend in the flour and remaining salt, and gradually add
milk. Stir until smooth. Cook over moderate heat, stirring constantly,
until the sauce thickens. Add the cooked, drained onions and paprika
and place pan over hot water to keep hot.
