* Ingredients:
4 salmon fillets, skinned and boned
Pepper chutney (recipe follows)
Crust
* Ingredients:
1 oz. black pepper
1 oz. basil
½ oz. parsley
½ oz. chives
½ oz. dill
2 oz. yogurt
2 oz. dijon mustard
1 oz. lemon juice
2 oz. bread crumbs
* Directions:
Combine pepper and finely chopped basil, chives, dill and parsley.
Mix with yogurt, mustard, lemon juice and bread crumbs. Chill
Chutney
* Ingredients:
1 oz. julienned green pepper
1 oz. julienned red pepper
2 oz. julienned yellow pepper
1 small tomato, chopped
2 oz. champagne vinegar
2 oz. brown sugar
1 bay leaf
Pinch black pepper
Chives for garnish
* Directions:
Cook all ingredients until syrupy.
Assembly: Spread herb mixture on one side of salmon fillet and sauté crust-
side down in non-stick pan with a thin layer of vegetable spray.
Flip salmon and finish cooking in a 400°F oven, approximately 7
minutes. Place ¼ of chutney on a warm plate, place salmon on top
and garnish with chives.
