* Ingredients:
1 lb. chard
4 medium potatoes
3 T. margarine
3 eggs or egg substitute, slightly beaten
¼ c. skim milk
1½ t. garlic salt
1 dash thyme and marjoram
2 T. chopped onion
½ c. grated Parmesan cheese
* Directions:
Wash and dry chard, and chop into 1/2-inch pieces. Wash potatoes
and cut into 1/8-inch slices (this will make 6-7 cups). Set aside 1
1/2 cups of potatoes; add remainder of potatoes and the margarine
to the chard. In a separate bowl, mix eggs, milk, garlic salt,
herbs, onion, and 1/4 cup of the Parmesan cheese. Stir into chard
mixture, then pour into a greased, 2-quart baking dish. Place
remaining potato slices on top. Cover with foil and bake at 350°F
until potatoes in center are done (about 50 minutes). Uncover and
sprinkle the rest of the cheese on top. Continue baking until
cheese is golden, about 10 minutes.
