Coconut apple crunch

Servings: 9-12

* Ingredients:

Filling: ½ c. frozen apple juice concentrate

½ c. nonfat milk

¼ c. dry coconut cream pudding mix

3 c. sliced apples

Topping: ¼ c. light margarine

½ c. whole wheat flour

½ c. instant oats

2 T. wheat germ

1 t. baking powder

½ t. cinnamon

½ t. salt

½ c. chopped nuts

½ t. vanilla

1 egg or egg substitute

Remaining pudding mix

* Directions:

Combine ¼ cup pudding mix with the milk. Add apple juice and
apples, and pour into an ungreased 8x8-inch baking pan. In a
separate bowl mix all the topping ingredients. Spread over the
apple mixture. Bake at 350°F for 35-40 minutes.
