You don't need any cookbooks anymore, as there are hundreds of recipes to choose from.
3 gallons maple sap
9 cups sugar
20 cloves
2 lemons
1/4 teaspoon yeast
Take one cup of sap 20 cloves and 2 lemons cut in half, put all in pan
and bring just to a boil, remove from heat and further squeeze
lemons. Strain into another bowl and save to add in later.
Heat 3 gallons sap to low boil add sugar and mix, remove from heat as
soon as sugar is disolved. Add the lemon/clove flavored mix from
above.
Stir well.
Wait for the soda to get down under 90 deg F. Add yeast mixed in 1/4
cup luke warm water. Bottle, wait two days at 70 deg f.
Refridgerate for a week. (cloudyness will settle)
