Mix then sift:
2 cups rice flour
4 1/2 tsp. double acting baking powder
2 tsp. maple sugar or other sweetener
2 tsp. salt
Beat the mixture while adding:
2 cups milk or milk substitute
Add and barely blend:
1 beaten egg or egg substitute (though be careful -- a good binder is needed)
1 tbls. melted butter or margerine
Proceed as for standard pancakes. You may need to be generous when
greasing the pan.
